Potato and Leek Soup [VEGAN]

Every bastard makes this soup…

Ingredients
2 large leeks
1 onion
2 medium potatoes
25g margarine
750ml vegetable stock
200 ml soya milk
Salt and pepper

Method
Finely chop the onion and leeks.
Peel (if you want, I don’t) and dice the potatoes.
Heat the margarine in a pan over a low heat and cook all vegetables for 10 minutes, covered, until they are soft.
Add stock and simmer for 25 minutes.
If you want you can purée now with a blender however i prefer chunky so i don’t.
Add the soya milk. Season and reheat before serving.
